I love almost everything about summer! The long days of sunshine, the warmth, the easy bbq dinners – the list can go on and on 😃 There are some things though I could do without – in particular, school summer sports 😥 It’s not that I don’t like my kids getting out there and tiring themselves out 😝, but it’s the endless nagging that comes with kids taking more stuff to school. See, Alex started his first full year of school this year. So he started the year with a bag, a book bag, a lunchbox and a water bottle. At least 90% of the time, we forget at…

Dairy Free, Egg Free Peach & Blueberry Trifle
My DH has never really been one to have a sweet tooth. He’s the sort that could take it or leave it when it came to chocolate, or would choose crackers & tomatoes as a snack over anything sweet. I guess when they say opposites attract, they really mean it in our case 😛 I mean really, who can say no to chocolate?! There are, however, two desserts he will never step away from – brandy snaps (which aren’t my favourite 😛) and trifle. In particular, his mum’s trifle with lashings of cream & custard and pineapple. This dessert we agree on. Unfortunately, with both our kids needing to…

Day 12: Chocolate Dipped Fruit Cones
I’m not usually a fan of both strawberries or watermelon. Frankly, I think watermelon just tastes like nothing 😛 Add chocolate to both of these however, and they weren’t too bad. The kids of course ate it all up – wish they’d eat their dinners as fast 😛 This canapé is kinda like a modern twist on the chocolate fondue. There’s fruit, marshmellows and chocolate involved, & these make a great kids party dessert or even just a light dessert after dinner. Ingredients: Fruit – I’ve used strawberries, watermelon & green grapes. You can of course use any fruit you like but these were in season at the time…

Day 10 : Apple Crumble
Apple crumble has to be one of my favourite desserts in winter. Warm apple with a crunchy topping served with vanilla custard (or french vanilla ice cream! :P). This is my canapé version – cold apple served with nice cold custard for a great summer dessert canapé. The muesli adds in the crunch without toiling making actual crumble mix 🙂 Ingredients: Delish Pie Filling – Apple & Cinnamon Hubbards Amazing Muesli – Apple Crumble Vanilla Custard Method: Choose how you will be serving the canapé – I’ve used curved disposable spoons, but you can use Chinese soup spoons or shot glasses etc Add the vanilla custard as the…

Day 9 : Sriracha, Strawberry & Salmon Ciabatta Bites
When I first made this, my husband was quite sure I’d lost my marbles – the combination is quite unusual lol. But the sweetness & acidity of the strawberry and heat of the sriracha work very well together with the salmon. The ciabatta was chosen as I’ve always loved the taste of freshly baked bread, but even crackers or blini would work quite well 🙂 Ingredients: Strawberries Regal Sliced Smoked Salmon Ciabatta loaf Cream Cheese (spreadable) Sauce: 1 teaspoon Sriracha Sauce 1/2 tablespoon Soy sauce 1 tablespoon strawberry jam Method: Mix the Sriracha sauce, soy sauce & strawberry jam, & set aside. Cut strawberries into pieces. Preheat the…

Confession Time
Dear Reader, I have a confession to make. Shhhh. In one way, it’s probably not the most appropriate time to make this confession, but in another, it’s probably the only time I can. One thing I must say first, is that no one has come to any harm with this confession. My wee family is as strong as ever, and those close to us understand this is our choice. You see, dear readers, we don’t do Santa. shock, horror, oh my word . Yes, you read right, we don’t do Santa. Yes, we do Christmas, presents, family, traditions, food & fun. But, not Santa. Phew, so glad that’s off my…
