I absolutely love when my mum makes her traditional poli for diwali but don’t usually have the time to watch it on the stove top with 2 little monkeys running about. This is a simplified version, usually ready made pastry & baked in the oven 🙂
Ingredients:
- 1 cup dessicated coconut
- 1/4 cup slivered almonds
- 1/2 cup raisins or sultanas
- 1 tablespoon icing sugar
- 1 tablespoon white sugar
- 1/2 teaspoon cardamom powder
- 1 pack (4 sheets) pre rolled sweet shortcrust pastry – defrosted.
Method:
Preheat oven to 180 degrees celsius.
Cut or Crush the almonds into smaller pieces.
Mix almonds, coconut, raisins, icing sugar, white sugar & cardamon powder. Place aside.
Doing one sheet at a time, cut each square pastry sheet into 4 squares. Cut each square into 4. So 1 sheet of pastry should give you 16 little squares.
Fold a little square into a triangle/cone shape, pinching the two sides together so it makes a pocket.
In the resulting pocket, fill in the coconut mixture. Pinch the remaining two sides together to close off the pocket.
You can then use a fork to decorate the pinched edges. Continue until all the filling is used up.
Place on a cookie tray.
Bake for 7-10 mins or until light brown.
