Some days it’s hard to tell which I like more… Chocolate or Cheese 😛 I guess it depends on the day and the occasion – some days it’s best to just hand me the king size block of chocolate & walk away 😛 This baked camembert is reminiscent of any 70’s party apparently – I wouldn’t know, I’m too young 😛 hehe It is absolutely the best though on a cold night, paired with crackers or fresh bread & a good wine. Ingredients: a wheel of camembert a couple of tablespoons of Barker’s of Geraldine Black Cherry & Vanilla w/ Apple Compote a splash of olive oil Method:…

Apricot, Pumpkin Seed, Coconut Dark Chocolate Bark
Let’s face it – even on a low carb diet I want some treats 😝 This hits the spot perfectly, and there aren’t too many carbs… As long as you don’t devour the whole thing in one sitting 😂 You can use any combination of seeds and dried fruit. I just chose this combination as it’s lower carb, but have done it with dried cranberries before and it’s A+. I guess when they say opposites attract, they really mean it in our case 😛 I mean really, who can say no to chocolate?! There are, however, two desserts he will never step away from – brandy snaps (which aren’t my favourite 😛) and trifle. In particular, his mum’s trifle with lashings of cream & custard and pineapple. This dessert we agree on. Unfortunately, with both our kids needing to…

Beetroot Jelly Red Velvet Trifle
I’ll be honest, I’m not a huge fan of traditional dark Christmas cake. After a full on lunch & dinner, the last thing I want to partake in is a huge slice of Christmas Cake full of dried fruit. Plus all that dried fruit can have rather .. ummm… interesting affects on one’s stomach 😛 I prefer the lighter Christmas dessert of trifle, which is usually made with jelly, custard, sponge cake and a bit of booze :P, but this is my version for this year. I’ve used a ready made red velvet cake, which cut down on my prep time, and made a beetroot jelly out of prepackaged beetroot…
